Ingredients:
For the base
• 2 1/2 cups. tea thick semolina
• 1 1/2 cups. tea sugar
• 250ml fresh milk
• 1/2 tbsp baking powder
• 1 tsp baking soda
• 1/2 tsp crushed Chios Mastic $
For the syrup
• 2 1/2 cups / tea sugar
• 2 cups of tea / water
For the cream
• 1 sachet of pastry cream patisserie
• 600ml milk
Preparation:
- Place in a bowl of semolina, sugar, baking powder and crushed mastic (pound with a tablespoon semolina in the mortar, because mastic "sticky") and mix.
- In another bowl, add the milk and soda, and stir.
- Pour the milk slowly and stir the mixture until it becomes pretty tight, but spread easily.
- Butter a baking pan and spread with a spatula to go everywhere. A trick to pave the mixture evenly: The hit bottom with his hand on the bench 5-6 times to spread itself.
- Preheat the oven to 180-200 oC and put about half an hour to cook.
- Remove from the oven and leave to cool.
- Pour the syrup into the fire and boil about 8 min.
- With cold and hot sweet syrup pour a little, just a tablespoon and let it cool.
- Whisk the ingredients of the cream for 5 min. with mixer.
- Pour the cream on the cake and spread with a spatula.
- Sprinkle with cinnamon and put it in the fridge for a while, thickens the cream with the sweet.
