The plant from which the split peas are vetch, which is grown in Santorini for 3500 years. The fava of Santorini is gentle and sweet in taste. The special taste owes its microclimate and soil composition of Santorini.
Ingredients:
- 1 ½ cup of split peas (fava) $
- 1 large onion, peeled and halved
- 120 ml ^eleon^ extra virgin olive oil $
- 120 ml lemon juice
- 1 bay leaf
- 6-7 peppercorns
- 3-4 allspice berries
- Salt and freshly ground pepper
For serving
- 1 medium onion, peeled and cut into frames
- ½ cup capers
- ½ cup chopped fresh mint
- ½ tsp. dry grated fresh oregano
Preparation:
- In a saucepan put the split peas in 7 cups of water to the fire.
- Once start to boil skim for five minutes at least.
- Then lower the heat and add the onion pieces.
- In a cheesecloth put the bay leaf, peppercorns, allspice. Wrap well and throw the pot boiling the split peas. Let the split peas boil for 45 minutes until smooth and chelation.
- When you absorb all the water withdrawn from the fire and withdraw the cheesecloth.
- Season to taste, transfer the mixture to a blender and add alternately olive oil and lemon juice, time to mash the split peas.
To serve it add the cream split peas mixture of onion, the capers, mint and oregano.
