Preparation:
- Chop the chicken in medium-sized pieces and plunge it into water containing a handful of salt.
- Let it soak for 4 hours, take it out and remove the skin.
- Fry the chicken in olive oil until brown.
- Then place it in a pot with 1 cup olive oil, the quartered onion, lemon juice, oregano, some salt and cover it with water.
- Boil the chicken, until only the olive oil remains in the pot.
